Pecorino Trabocco Doc Brut Sparkling Wine

Appellation: “Trabocco” ABRUZZO DOC PECORINO SPUMANTE

Grape varieties: 100% Pecorino Alcohol content: 11.5% vol.

Harvest: late August/early September.

Secondary fermentation and Aging: 30 – 45 days.

Residual sugar: Brut, 0.8 g/l Production area: Central Italy,

Abruzzo, province of Chieti.

Vinification: crushing and soft pressing of the grapes.

Fermentation: thermodynamic control (14 to 16°C) using selected yeasts.

Serving temperature: 5-6°C Appearance: straw yellow with

greenish reflections and a fine, velvety perlage.

Nose: notes of crisp apple and pear, supported by a distinct citrus note.
